Get Ready for the 21 Day Fix


Muffin Tin Meatloaf

Marvelous Muffin Tin Meatloaf

Ingredients:
2lbs. of lean beef
1 cup of sharp cheddar cheese shredded
2 egss beaten
1 small onion- diced
¼ cup of tomato paste
Brown Rice
2 tsp. of Worcestershire sauce
1 tbs. of ground mustard
extra virgin olive oil


Procedure:
1.    Preheat oven to 350 degrees and use olive oil spray to grease the muffin tin pan.
2.    Take a tsp. of extra virgin olive oil and heat in a large skillet. Add diced onions- sauté for a few minutes and remove from heat- allow to cool.
3.    In a small bowl, combine the tomato past, mustard, Worcestshire sauce- mix well.
4.    In a large bowl, combine the beef, eggs, cheese, and sautéed onions- then add in the tomato paste mixture.
5.    Spoon into muffin tins.
6.    Serve with brown rice.
7.    You can add a very small amount of tomato sauce or ketchup on top (totally worth a little cheat).

Cooking Dinner- A Family Affair

Great tip to share the load of cooking dinners. I do 3 dinners, my hubby cooks 2 dinners, and Erik and Kelly each take 1. We have successfully been doing this for almost 3 weeks now- "Awesome Sauce!!!"

Chicken Pineapple Stir-Fry

Chicken Pineapple Stir-Fry:
Ingredients:
Chicken Breasts Cubed (1-2 lbs. depending on how much much protein you want)
One 16oz. jar of pineapple salsa
Brown Rice (follow box directions)
2 garlic cloves

Procedure:
1    Place chicken in pan, add garlic- once chicken is almost fully cooked
2   Add salsa and let chicken simmer on low for 5-8 minutes
3    Finally add rice, stir and enjoy!!

EASY PEASY LEMON SQUEEZY!!!

Red- Protein
Green-Veggies
Yellow- Carbs
Purple- Fruit
(21 Day Fix Conversion for this meal- 2 reds, 1 green, 1 yellow, and 1 purple)

21 Day Fix Prep

*Fun Tip- I bought color coded labels at Target and organized all of my pantry foods to match the color containers for the 21 day fix.

My 11 year old daughter also got in on the action as she emptied spices we never use, and was like a little chemist putting together the ingredients for the "21 Day Fix" Spices- so much fun. It has truly become a family adventure.

Create a health and fitness motivation board to hang up wherever you decide to do your workouts. I will be taking a blue post-it off each time I complete a workout. I am ready for a healthy lifestyle!

I thought it would be fun to clear out a shelf in 1 of my kitchen cabinets, and add color coded labels to my 21 Day Fix containers. Of course, I also put in my Shakeology bag and cup (my healthy breakfast every morning.

All About Me

I love being a wife, mother, and kindergarten teacher....but it takes a lot of multitasking, and can be very stressful. In recent months, I have just felt so overwhelmed, so out of balance with my life. I just felt tired all the time.

Of course when I sat still and reflected I knew what was missing right away... a healthy lifestyle. I have never eaten healthy or exercised consistently. Admittedly, I never really had to worry about my weight until after my 2nd child was born at age 34. Suddenly I realized that I can't eat junk food and not gain a ton of weight. So,  I would say that I have been on the weight loss/diet rollercoaster for the past 12 years (gain 10, lose 5, gain 15, etc.).

Over the past couple of years I am happy to say that I actually did adopt 1 healthy habit- beginning the day with a nutritional shake. Now, I have tried many brands, but I have to say that I am absolutely in LOVE with Shakeology. I have more energy, my sugar cravings are down, and has improved my digestion.

Drinking Shakeology led me to...Beachbody. I began to browse around and learned about the Beachbody Challenge: drink Shakeology every day (which I was already doing), select a workout program, sign up with a Beachbody Coach, and join a challenge group. So that is exactly what I did. It turns out that my son Erik's Business Teacher was also Beachbody Coach. Her name is Sarah Griffith and I am forever grateful to her. After a long conversation, she suggested trying the 21 Day Fix as my workout and nutrition program. 



I felt so passionate about changing my lifestyle and make eating healthy and exercising  a HABIT that I immediately signed up to be a Beachbody Coach. I can't wait to be a product of the product. I am so excited to be going on this lifelong journey to a healthy lifestyle.
